Ingredients:

  • The meat from 1 young coconut (available at any asian grocery store)
  • 1/2 cup of frozen pineapple
  • Add 1/4 cup of young coconut juice
  • 15-20 drops of stevia (I recommend “KAL” brand specifically due to its taste and lack of after taste)

Directions:

  • Add all ingredients into a high speed blender until smooth
  • Freeze for later use or serve immediately

This tastes amazing!

Ingredients

  • 1 package of strawberries halved
  • 2 apples diced
  • 1/2 cup blueberries
  • 2 kiwis diced (peel skin)
  • 2 tangerines peeled and separated
  • 2 mangoes diced
  • 1/4 cup fresh orange juice
  • 1 tbsp lemon juice
  • 5-10 drops stevia
  • 2 tbsp mint leaves chopped

(You can add any fruit to this if you wish)

Directions

  • Mix orange juice, lemon juice and stevia in a bowl
  • Add all fruits and mint to bowl and toss well
  • Serve chilled

Ingredients

  • 2 ounces fresh organic baby spinach
  • 1 leaf swiss chard (optional)
  • 2 cups fresh or frozen pineapple
  • 1 cup fresh or frozen mango
  • 3 kiwis, with the skin
  • 1/2 avocado
  • 1 tablespoon chia seed or flax seed
  • 1 banana
  • 1.5 cups water

Directions

  • Blend all ingredients in Blendtec blender on “smoothie” setting.

Prep time: 3-5 mins

Serves: 2-4 adults

Picked up something new at Trader Joe’s today.  Sunflower Seed Butter!

Just wanted to try something new and different.  I must say I was not sure of what to expect, but this stuff tastes amazing on it’s own.  I am very excited on this find.  Another way to get fiber, protein and fat in a healthy ratio.

This can also be added to a smoothie in place of peanut butter or spread onto some crackers or an apple.

The price was 3.99 for a 1 pound jar making it cheaper than almond butter (6.99) but more than peanut butter (2.49)

This is my new favorite breakfast cereal.  It literally tastes like you are eating a pancake!

I suggest adding some almond milk and sprinkling some walnuts on top.

For all those chocolate smoothie lovers!  You are going to love this recipe.  It is easy to prepare and contains all of your favorite superfoods. Chocolate, walnuts, chia seeds and whey protein….you can’t ask for a better tasting smoothie to satisfy your hunger and fuel your body with healthy fats, anti-oxidants, fiber, lignans, protein and very little carbs!

Ingredients

  • 1/4 cup of raw walnuts (you may sub with raw pecans, cashews or almonds)
  • 6 pieces of Endangered Species – Dark Chocolate
  • 2 scoops of Whey Cool Protein Powder by Designs for Health
  • 2 teaspoons of Chia seeds (you may sub with ground flax seeds)
  • 1.5 cups of water
  • 1/2 cup ice cubes

Directions

  • Add all ingredients, except protein,  into your Blentec blender (you will need a powerful blender to chop up the nuts and chocolate)
  • Once the ingredients are well mixed, add the protein in last and pulse the blender to mix the protein in
  • Serve and Enjoy

*** Note: overblending the protein at high speeds with cause a lot of foaming in the shake and disrupt the delicate structure of the protein

Tonight was Pizza Night!  This crust that we used is gluten free.  We bought it from Krogers.  It’s actually a Canadian company that makes it, so I’m sure its available in Loblaws Health Food Section. This ready made pizza crust is better than any other crust that we’ve had.  The company is Kinnikinnick.  We also made this dairy free and opted to put no cheese on it.  However, the crust does contain egg, so it is not vegan.

Ingredients

Pizza Sauce

  • 2 cups crushed tomatoes (from can)
  • 1 clove garlic
  • 1/4 tsp italian seasoning
  • 2 tbsp extra virgin olive oil
  • sea salt and ground black pepper to taste

Toppings

  • 8-10 mushrooms sliced
  • 10-15 sundried tomatoes sliced
  • 8-10 artichoke hearts marinated in oil (We use Kirkland brand from costco)
  • 20 olives sliced
  • 1 cup chopped spinach
  • Gluten free pizza crust (Kinnikinnick)

Directions

  • Top pizza crust with desired amount of sauce
  • Spread toppings on crust
  • Bake in oven at 375 F, for 10-15 minutes

Ingredients

  • 3 leaves turnip greens
  • 1 kiwi
  • 1 cup berries of your choice (we use blueberries)
  • 1 banana
  • 1/2 cup strawberries
  • 1 tbsp chia seeds
  • 1-2 scoops of Lepterra or Vega protein (or high quality protein of your choice)
  • filtered water to desired consitency

Directions

  • Add the fruits, veggies and chia seeds into the blender with water.
  • Blend the contents
  • Then add protein to the blender and pulse gently to mix contents
  • Do not over-blend the protein, or they will become denatured
  • Drink Immediately!

Yellow peppers are very high in lutein and zeaxanthin which are great for healthy eyes and are both powerful antioxidants! Red peppers are very rich in Vitamin C and contain 11 times more beta-carotene than green peppers.  Beta-carotene is a form of Vitamin A and is great for your eyes.  They promote a healthy heart and healthy lungs.

This soup has an amazing creamy texture, its quite filling, and sooooo fast to make!

Ingredients

  • 1 large red pepper
  • 1/2 cup tomatillos (if available) or 1 tomato
  • juice of 1 lime or lemon
  • 1 small avocado
  • 1/4  small  jalepeno
  • 3/4 cup unchopped cilantro
  • 1 large yellow pepper
  • 1 cup cherry tomatoes
  • 2 cups hot water
  • 1 clove garlic
  • 1/2 tsp sea salt
  • 1/4 tsp black pepper

Directions

  • Remove seeds from peppers and quarter peppers
  • Peel and remove seed from avocado
  • Throw all ingredients in Blendtec or Vitamix blender
  • Blend on “soup setting”
  • Garnish with cilantro

Ingredients

  • Water as needed
  • 1/4 tsp turmeric
  • 1/4 tsp red chili, add more if you want them more spicy
  • 1/2 tsp ground cumin powder
  • 1/2 tsp honey
  • 1/2 tsp sesame seeds
  • 1 tbsp fresh lemon juice
  • sea salt
  • 1 clove of pressed garlic
  • 1 inch piece of ginger, grated
  • 1 bunch of kale, remove stems and break into small pieces

Directions

  1. Combine all ingredients, except kale, in a bowl and mix well.
  2. Add the kale to the bowl and coat well with the above mixture.
  3. Place the kale onto a baking sheet and put in the oven at the lowest temperature possible.
  4. Remove the chips from the oven when they are crispy
  5. This is a very powerful anti-cancer snack!

Cook Time and Prep Time: 30-40 min, will vary depending on your oven

Serves: 4-6
