The term “food sensitivity” is often used to describe a delayed immune reaction to a food. Food sensitivities are the result of an unhealthy intestinal lining and often lead to a delayed immune response. This response can take 6-72 hours, making it difficult to relate a specific food to the corresponding health consequence. Food sensitivities can be challenging to identify without testing since symptoms may range from gastrointestinal issues to mental or emotional distress.
