Orange Coconut Salad

Ingredients

  • 4 tangerines or oranges peeled
  • 2 bananas sliced
  • 1/4 cup shredded coconut
  • 2 tbsp sliced almonds

Directions

  • Toss all ingredients together in a bowl

Ingredients:

  • The meat from 1 young coconut (available at any asian grocery store)
  • 1/2 cup of frozen pineapple
  • Add 1/4 cup of young coconut juice
  • 15-20 drops of stevia (I recommend “KAL” brand specifically due to its taste and lack of after taste)

Directions:

  • Add all ingredients into a high speed blender until smooth
  • Freeze for later use or serve immediately

This tastes amazing!

Ingredients

  • 1 eggplant
  • 2 cloves garlic
  • 1/4 cup fresh lemon juice
  • 8 black kalamata olives
  • 1 tbsp fresh parsley
  • 2 tbsp sesame seeds
  • 1 & 1/2 tbsp extra virgin olive oil
  • sea salt and black pepper to taste

Directions

  • Preheat oven to 375 F
  • Prick eggplant with a fork several times and place on baking sheet
  • Bake turning frequently for 20-25 minutes
  • Remove from oven, let cool and peel skin as much as possible
  • Combine all ingredients in blendtec blender and blend on “soup” setting to get a smooth puree

Picked up something new at Trader Joe’s today.  Sunflower Seed Butter!

Just wanted to try something new and different.  I must say I was not sure of what to expect, but this stuff tastes amazing on it’s own.  I am very excited on this find.  Another way to get fiber, protein and fat in a healthy ratio.

This can also be added to a smoothie in place of peanut butter or spread onto some crackers or an apple.

The price was 3.99 for a 1 pound jar making it cheaper than almond butter (6.99) but more than peanut butter (2.49)

Ingredients

  • 1 cup artichokes
  • 3/4 cup green olives
  • 1/2 cup parsley
  • 1 clove garlic
  • 8 raw almonds
  • 1 tbsp olive oil

Directions

  • Blend all ingredients in a food processor and enjoy with your favorite veggies, flatbread or crackers!

These are so tasty and healthy.  They will satisfy your craving for something sweet! Because of the walnuts they are very high in Omega-3 fatty acids, which are essential fats for all of your body’s cells, especially your brain.

Ingredients

  • 1 cup walnuts
  • 3 dates pitted
  • 2-4 squares of dark chocolate (Endangered Species brand)
  • 1 tsp shredded coconut + additional for coating truffles

Directions

  • In a food processor, mix all ingredients together
  • With your hands form truffle sized pieces
  • Coat with shredded coconut
  • Makes about 10 pieces
  • Serving size – 2 pieces

If you cannot find chickpea flour, you can omit it from the recipe…I know several people who have made it without.

Organic Dark Chocolate

This chocolate is 88% cacoa.  The higher the cacoa content of chocolate, the better it is for you! Cacao is an excellent “brain” food.  It enhances your mood and your brain. Its shown to have anti-cancer properties, improve skin elasticity and improve cardiovascular health.  Most chocolate available at your local grocery store is low in cacoa and high in sugar, milk fat and artifical flavors.  So look for chocolates that are greater than 80% cacoa.

This bar is very low in sugar (5 grams of beet sugar), vegan (no milk) and gluten free.  A serving size is half  a bar!

We both have a few squares every night as a dessert!

Brand: Endangered Species


Ingredients

  • Water as needed
  • 1/4 tsp turmeric
  • 1/4 tsp red chili, add more if you want them more spicy
  • 1/2 tsp ground cumin powder
  • 1/2 tsp honey
  • 1/2 tsp sesame seeds
  • 1 tbsp fresh lemon juice
  • sea salt
  • 1 clove of pressed garlic
  • 1 inch piece of ginger, grated
  • 1 bunch of kale, remove stems and break into small pieces

Directions

  1. Combine all ingredients, except kale, in a bowl and mix well.
  2. Add the kale to the bowl and coat well with the above mixture.
  3. Place the kale onto a baking sheet and put in the oven at the lowest temperature possible.
  4. Remove the chips from the oven when they are crispy
  5. This is a very powerful anti-cancer snack!

Cook Time and Prep Time: 30-40 min, will vary depending on your oven

Serves: 4-6
