Ingredients

  • 1/2 avocado
  • Squeeze of fresh lemon juice
  • 1/2 cup brown rice uncooked
  • 1/4 can black beans
  • pinch of ground cumin
  • himalayan sea salt to taste
  • black pepper to taste

Directions

  • Cook brown rice until soft and tender
  • Rinse black beans under water
  • In a small sauce pan, heat black beans on low heat and add cumin, salt, black pepper and squeeze of lemon
  • Mash beans with a fork
  • Add brown rice (about 1/2 a cup cooked) and mash with fork
  • Mash avocado, add a small amount of lemon juice and add this to brown rice and black beans
  • Mix well

Recommended for toddlers 1 and older

Ingredient
– 1 avocado diced
– 2 tomatoes diced
– 1 lemon
– 1/2 small red onion sliced
– 1 tsp oregano
– 1 handful black olives sliced
– 1 heart romaine lettuce
– 1 tbsp extra virgin olive oil
– sea salt and black pepper to taste
– red wine vinegar

Directions
1. Add zest of one lemon to a bowl
2. Squeeze the juice of half of the lemon
3. Add oregano to this bowl and extra virgin olive oil
4. In a separate bowl add onions with a splash of red wine vinegar and a small pinch of sea salt and black pepper
5. Chop lettuce and add to another bowl with avocado and tomato
6. Add dressing and marinated onion to the bowl with the lettuce
7. Toss well and serve.

Ingredients

  • 1 mango, peeled and sliced thinly
  • 1 avocado, sliced thinly
  • 1/4 red onion sliced thinly
  • 1/2 cup walnuts (omit walnuts to make this standard process purification friendly)
  • 4 cups mixed baby greens

Ingredients

  • 2 scallions finely chopped
  • 1-2 cloves garlic
  • 1/4 tsp red chili powder
  • 1 avocado
  • 1 medium tomato
  • 2 tsp basil
  • 1/3 cup almonds
  • 1/4 cup freshly squeezed lemon juice

Directions

  • Soak almonds for 12-24 hours, discard water
  • Pour 1 cup of boiled water over the almonds and let them soak for 30-60 seconds and then discard water
  • Peel skin off almonds (they are now blanched)
  • Put blanched almonds in food processor until finely chopped
  • Add basil and scallions to food processor
  •  Then add tomato, avocado, garlic, red chili powder and lemon juice
  • Serve this dip with your favorite raw veggies or crackers (we use Crunchmaster’s or Mary’s Gone Crackers gluten free crackers available at Costco)

This is a good option for breakfast instead of boring rice cereal

Ingredients

  • 1/3 ripe banana peeled
  • 1/2 avocado peeled and seed removed

Directions

  • Put both ingredients in a bowl and mash well with a fork or potato masher
  • Serve immediately to prevent avocado and banana from becoming brown

Mexican Salad

Ingredients

  • 6 leaves romaine lettuce chopped
  • 1 – 15 oz can black beans rinsed and drained
  • 1 avocado cubed
  • 1 tomato diced
  • 2 tablespoons chopped cilantro
  • 2 tablespoons finely chopped red onion
  • Salsa to taste (we use Jack’s salsa from Costco)
  • Juice from lime to taste
  • Organic corn tortilla chips crumbled (we use eatsmart snyders brand available at costco -see pic)

Directions

  • Chop lettuce and place in bowl
  • Add beans, tomatoes, red onion, avocado  and cilantro on top of lettuce
  • Add lime juice
  • Top with your favorite salsa

Serves: 4

Ingredients

  • 2 cups finely shredded red cabbage
  • 1 small red, orange or yellow pepper, chopped
  • 1 avocado, diced
  • 2 tablespoons finely chopped red onion
  • 3 tablespoons lemon juice
  • 1 tbsp extra virgin olive oil
  • 1/4 cup flax seeds
  • 3 tablespoons cilantro finely chopped
  • sea salt and ground black pepper to taste

 

Directions

  • Toss all ingredients together in a large bowl

Ingredients

  • 1/4 beet
  • 2 cups beet greens
  • juice of 1 lemon
  • 3 medium carrots
  • 2 leaves of turnip greens
  • 1 tomato
  • 1 avocado
  • 1 & 1/2 cups warm water
  • sea salt and black pepper to taste

Directions

  • Blend all ingredients in blendtec blender under “soup” setting

Ingredients

  • 1 medium red bell pepper
  • 1/2 avocado
  • 2 & 1/2 cups kale
  • 1/4 cup basil
  • 1 green onion
  • 1 clove garlic
  • 1 stalk celery
  • 2-3 tomatoes
  • 1/2 cup warm water
  • 1/2 lime juiced
  • sea salt and black pepper to taste

Directions

  • Blend well in Blendtec blender on “soup” setting
  • Serve and Enjoy!

Prep time and “Cook” time: 7 minutes

Serves 4

Ingredients

  • 2 Carrots chopped thinly
  • 1 Medium cucumber chopped thinly
  • 1 Avocado sliced
  • 2 Celery stalks chopped thinly
  • Rice paper sheets (see picture – from Asian store)
  • You can put whatever veggies you want in these, unripe green mangoes are great in these as well.  You can also put cilantro in them.

Directions

  • Soak rice paper sheets in warm water until pattern on the sheets disappears (make sure that you soak them one by one in a tray that is flat)
  • Once the pattern disappears, place flat on a chopping board
  • Add a small amount of each veggie into the middle of the rice paper length wise
  • Fold rice paper sheet from the bottom and top
  • And then roll tightly from left to right (like a burrito)
