Ingredients
- 4 cups quinoa cooked
- 1/4 cup grated raw beets
- 1/4 cup grated raw carrots
- 1/4 cup tightly packed finely chopped cilantro or parsley
- 1/3 cup finely chopped green scallion
- 2-3 tbsp extra virgin olive oil
- 1/4 cup freshly squeezed lemon juice
- sea salt to taste
Directions
- Combine all ingredients in a large bowl. Mix well and serve
I wonder if you are supposed to peel the beets first?
