Ingredients

  • See bean dip recipe
  • 1 can tomato sauce
  • 1 clove garlic pressed
  • 1/4 jalepeno minced
  • 1/4 tsp ground cumin
  • 1/4 tsp taco seasoning
  • 6 corn or rice flour tortillas
  • 1 green pepper diced
  • 8 olives sliced
  • 5-6 sprigs cilantro chopped finely

Directions

  • Place tomato sauce in small sauce pan on medium heat
  • Add garlic, jalepeno, cumin, and taco seasoning in tomato sauce
  • Heat and set aside
  • Put about 1/4 cup bean dip in tortilla, roll tortilla and place in baking dish
  • Pour tomato sauce over tortillas
  • Sprinkle olives and green peppers on top of tomato sauce
  • Preheat oven to 350 F
  • Bake for 20 min at 350 F
  • Take out of oven and top with cilantro
