Avocados contain heart healthy monosaturated fats. They are good for the heart because they are high in folic acid and vitamin B6. They are a good source of vitamin K, which plays a role in blood and bone function. Adding avocados to salads increases the absorption of cartenoids (an excellent antioxidant) in the blood stream. They are a good source of fiber and therefore lower cholesterol levels as well and increase your HDL (good cholesterol). To prevent avocados from turning brown, coat them with lemon juice.
Ingredients
- 1 tomato diced
- 1 avocado peeled and diced
- 1/2 of a medium cucumber diced
- 1 tablespoon extra virgin olive oil
- 1/2 lime or lemon juiced
- sea salt and black pepper to taste
- 3 sprigs cilantro chopped finely
Directions
- Mix all ingredients in a bowl and serve
This sounds Yum! I have tried this recipe but instead of cucumbers I marinate diced red onions in lemon juice and then add it to the rest of the ingredients! It is really tasty!
